WING IT

Fans gobble more than 1.35 billion (!) chicken wings on Super Bowl Sunday. These risk on traditional wings, inspired by fare served at NFL stadiums, are must-haves no matter the sports season.

Bacon-Wrapped Grilled Chicken Wings We took a cue from the bacon-wrapped, barbecue sauceg-lazed chicken served to Dallas Cowboys fans.

Prepare grill for indirect heat (bank coals to one side for a charcoal grill; light 1-2 burners for a gas grill). Soak 3 dozen toothpicks in water 20 minutes. Seed and mince 1 jalapeño pepper. Pat dry 3 dozen chicken wings and drumettes; sprinkle with salt and pepper. Wrap each piece snugly with ½ piece bacon, securing with a soaked toothpick. Oil surface of grill with vegetable oil. Grill chicken over direct heat 4-6 minutes or until bacon is lightly browned, turning frequently to brown evenly. Move chicken to unheated side of grill; cover and cook 20-25 minutes or until chicken is done, basting with ½ cup of your favorite honey-chipotle barbecue sauce twice during last 5 minutes. Sprinkle with jalapeño. Serve with guacamole and lime wedges. Serves 6.

Flamin’ Hot Cheetos Chicken Wings These wings were inspired by the Cheetos–crusted chicken enjoyed by Houston fans.

Adjust 2 oven racks to middle; preheat to 400°F. Place 2 foil-covered sheet pans in oven while it preheats. In shallow pan, combine 1 cup panko breadcrumbs, 1 cup crushed Flamin’ Hot Crunchy Cheetos and salt to taste. Pour 1 cup buttermilk in a bowl. Working with 1 piece at a time, dip 3 lb chicken wings in buttermilk, allowing excess to drip o�. Dredge in panko mixture; set aside. Remove baking sheets from oven; spray with cooking spray. Arrange wings in a single layer; spray with cooking spray. Bake 25 minutes. Remove from oven, turn wings and lightly spray with cooking spray. Bake 20 minutes or until done. Drizzle with sriracha mayo (such as Kikkoman) and serve with mango chutney (such as Patak’s). Serves 6.
